Vegetables in Green Sauce

Try this healthy vegetable stew in green sauce, it is so versatile that it can be a main dish or a side for your other dishes. Remember you can enjoy this stew in tacos and pair it with white rice.

  • 4 potatoes, peeled and cut into medium squares
  • water, to boil the potatoes
  • salt
  • 5 tomatillos
  • 1/2 onions
  • 1 clove garlic
  • 1 cuaresmeño chile
  • water
  • salt

  • 1/4 onions, in thin strips
  • 3 zucchinis, in 1 cm slices
  • 1 cup button mushrooms, in slices
  • cilantro, for garnish
  • white rice, to accompany

  • Heat the water in a pot and cook the potatoes for 10 minutes, season with salt. Drain the water and set aside.
  • Cook the tomatoes, onion, garlic, and serrano chili in a pot with water for 5 minutes or until the tomato changes color. Set aside.
  • Heat oil in a pot and fry the onion for 5 minutes, then add the zucchini, potatoes, and mushrooms, cook for 2 minutes.
  • Add the sauce and the potatoes, cook for 10 minutes and season with salt and pepper.
  • Serve on a flat plate and accompany with white rice.
