4 potatoes, peeled and cut into medium squares
water, to boil the potatoes
salt
5 tomatillos
1/2 onions
1 clove garlic
1 cuaresmeño chile
water
salt
pepper
1/4 onions, in thin strips
3 zucchinis, in 1 cm slices
1 cup button mushrooms, in slices
cilantro, for garnish
white rice, to accompany

Heat the water in a pot and cook the potatoes for 10 minutes, season with salt. Drain the water and set aside.
Cook the tomatoes, onion, garlic, and serrano chili in a pot with water for 5 minutes or until the tomato changes color. Set aside.
Heat oil in a pot and fry the onion for 5 minutes, then add the zucchini, potatoes, and mushrooms, cook for 2 minutes.
Add the sauce and the potatoes, cook for 10 minutes and season with salt and pepper.
Serve on a flat plate and accompany with white rice.
