Andalusian-style green beans

Traditional Andalusian cuisine is considered a form of native culinary art. Its dishes are passed down from generation to generation, as they are highly appreciated among the most discerning palates.

  • 1 kilo green bean
  • 1 red bell pepper
  • 4 cloves garlic
  • 2 slices bread, from the previous day
  • 1 pinch ground cumin
  • 2 tablespoons vinegar
  • olive oil
  • salt, and pepper to taste

  • Clean the green beans, cut them in half if they are flat. Boil them with water and salt for about 1/2 hour, until they are tender. Drain and set aside.
  • In a frying pan, add a little oil and fry the whole peeled garlic, the bread, and the red pepper. Add them to the blender with vinegar and a splash of water. Blend.
  • In the same oil where you fried the garlic, sauté the green beans a little. Add the mixture you blended earlier. If necessary, add a little more water.
  • Let it cook for 10 minutes over medium heat.
