Artichoke Soufflé

  • 1 cup egg white, San Juan®
  • 1 can artichoke heart
  • 4 tablespoons butter
  • 5 tablespoons flour
  • 3 cups cow's milk
  • salt and pepper
  • 200 grams Manchego cheese

  • Preheat the oven to 210ºC.
  • Chop the artichoke hearts.
  • Melt the butter in a saucepan and add the flour, wait until it thickens.
  • Add the milk and stir, remove from heat.
  • Add the chopped artichokes, Manchego cheese, season with salt and pepper.
  • Spread a little butter in the soufflé molds and then flour them.
  • Beat the egg whites until stiff peaks form, and gently fold the egg whites into the artichoke mixture.
  • Pour the mixture into the soufflé molds, bake for approximately 15 minutes.
