1 cup egg white, San Juan®
1 can artichoke heart
4 tablespoons butter
5 tablespoons flour
3 cups cow's milk
salt and pepper
200 grams Manchego cheese
Preparation

Preheat the oven to 210ºC.
Chop the artichoke hearts.
Melt the butter in a saucepan and add the flour, wait until it thickens.
Add the milk and stir, remove from heat.
Add the chopped artichokes, Manchego cheese, season with salt and pepper.
Spread a little butter in the soufflé molds and then flour them.
Beat the egg whites until stiff peaks form, and gently fold the egg whites into the artichoke mixture.
Pour the mixture into the soufflé molds, bake for approximately 15 minutes.
