Asparagus Pie

The recipe for asparagus pie is delicious. You can prepare it a day in advance and just bake it when you are ready to serve.

  • Brisée pasta
  • 1 bunch asparagus, cut into 4 cm pieces
  • 2/3 cups table cream
  • olive oil
  • 2 eggs
  • 1/2 cups Gruyère cheese, grated
  • salt, to taste
  • pepper, to taste
  • cayenne pepper, to taste
  • 1 teaspoon mustard

  • Roll out the dough and place it in a pie mold. Bake at 180ºC for 10 minutes. When ready, remove and let cool slightly.
  • In a skillet, place the asparagus with a little olive oil. Just until they are cooked and take on a little color.
  • In a bowl, mix the eggs, half cream, salt, pepper, cayenne pepper, and mustard.
  • Once the dough is warm, add the asparagus and the egg mixture.
  • Bake for approximately 30 minutes at 180ºC.
