Carrot Tinga

  • 2 tomatoes
  • 2 cans chipotle chile
  • 1/2 cups water
  • 1/4 cups Italian dressing
  • 1 onion, sliced
  • 2 cups carrot, peeled and grated
  • 1/2 cups sour cream
  • tortilla chips, (for serving)

  • Blend the tomatoes, chiles, and water well.
  • Heat the dressing in a large saucepan over medium-high heat. Add the onions; cook, stirring frequently, for 5 min. or until they are tender but crispy. Add the tomato mixture; bring to a boil.
  • Incorporate the carrots and cover. Simmer for 10 min. Serve with a bit of sour cream and tortilla chips.
