We place the lentils in a pot with cold water, covering them with double their volume of water, along with the onion, carrot, leek, and garlic cloves, which we will include peeled, cleaned, and whole. We let it cook uncovered for one hour.
We remove the vegetables from the lentils and blend them. We can chop the carrot into small slices and puree the rest of the vegetables.
We add this vegetable puree and the sliced carrot back to the lentil cooking for another 30 minutes.
We adjust the salt and add 4 tablespoons of extra virgin olive oil, stirring the lentils gently. We serve at that moment.
