Pickled Carrots

These pickled carrots are perfect for accompanying all your dishes; dare to make your own carrots instead of buying them at the store, they are easier to make than they seem.

  • 2 cones piloncillo
  • 2 bottles vinegar, from barrilito
  • 2 onions, in wedges
  • 400 grams carrot, peeled and in rounds
  • allspice berries
  • 1 corsage aromatic herbs
  • salt
  • olive oil
  • pepper
  • 4 Jalapeño chiles
  • 2 cloves garlic, peeled

  • Put a little oil in the pressure cooker and cook the carrot and onion a bit. Add the garlic cloves cut into quarters, the piloncillo, vinegar, peppercorns, and herbs.
  • Add the well-washed chiles and close the pressure cooker. Set the heat to low and cook for 30 minutes until the chiles are cooked.
  • Let cool and serve.
