Spicy Carrot Salad

This spicy carrot salad recipe is perfect for a mid-afternoon salad or as a side dish, a delicious combination.

  • 1 cup carrot, peeled and coarsely grated
  • 1 pinch salt
  • 1 teaspoon extra virgin olive oil
  • 1/2 cloves garlic, finely chopped
  • 1/2 ginger, peeled and finely chopped
  • 2 teaspoons sunflower oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon lime juice
  • 1 cup FAGE® Total 0% greek style yogurt

  • Place the grated carrots in a bowl and add salt.
  • Heat the olive oil and sauté the garlic and ginger. When they start to change color, add to the bowl of grated carrots.
  • Heat the sunflower oil until very hot. Add the mustard seeds to the pan and heat until they start to pop.
  • Pour the mustard seeds and the oil over the carrot mixture.
  • Add the lemon juice and FAGE® Total 0% Greek Style Yogurt, and mix well.
