Cauliflower Sushi

If you love sushi but are watching your weight, reduce your carbohydrate intake with this amazing sushi version made from Eva® Cauliflower Bits. With a layer of cream cheese, avocado, mango, tuna, and salmon. Don't miss out on making it.

  • 1 pinch salt
  • 3 cups Eva® cauliflower bits
  • 190 grams cream cheese, at room temperature
  • 4 nori
  • 1 avocado, in slices
  • 1 mango, in slices
  • 100 grams fresh salmon, cut into thick strips
  • 100 grams fresh tuna loin, cut into thick strips
  • ponzu sauce, for serving
  • Tampico sauce, for serving

  • Heat water in a pot until boiling. Add salt and cook the Eva® Cauliflower Bits for 5 minutes. Drain and immerse in cold water to stop the cooking process. Drain again.
  • Mix Eva® Cauliflower Bits with cream cheese in a bowl.
  • Cover the seaweed with the cauliflower mixture, pressing lightly with your hands. Be sure to leave a small space at the edge to roll it up.
  • Place slices of avocado, mango, salmon, or tuna and roll into a sushi roll. Seal with a bit of water, brushing the edge of the seaweed, and seal very well.
  • Cut the roll with a very sharp knife and serve with ponzu and tampico.
