Heat water in a pot until boiling. Add salt and cook the Eva® Cauliflower Bits for 5 minutes. Drain and immerse in cold water to stop the cooking process. Drain again.
Mix Eva® Cauliflower Bits with cream cheese in a bowl.
Cover the seaweed with the cauliflower mixture, pressing lightly with your hands. Be sure to leave a small space at the edge to roll it up.
Place slices of avocado, mango, salmon, or tuna and roll into a sushi roll. Seal with a bit of water, brushing the edge of the seaweed, and seal very well.
Cut the roll with a very sharp knife and serve with ponzu and tampico.
