Cauliflower Mac and Cheese

  • 1 cup sour cream
  • 1 cup Santa Clara® whole milk
  • 190 grams cream cheese
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 cups cheddar cheese, grated
  • 1 cauliflower, cooked and cut into florets
  • 1 teaspoon garlic powder
  • salt and pepper
  • 1 cup cheddar cheese, for broiling
  • chives, finely chopped, for garnish

  • Preheat the oven to 180°C.
  • In a medium saucepan, add sour cream, Santa Clara® whole milk, cream cheese, Dijon mustard, and cheddar cheese over medium heat. Cook for 5 minutes, whisking until melted, then add the cauliflower and season with garlic powder, salt, and pepper.
  • Place the previous mixture in a baking dish, adding more cheddar cheese on top.
  • Broil for 10 minutes in the oven.
  • Garnish with chopped green onions.
