Cauliflower Tacos al Pastor

  • vegetable oil
  • 1/4 onions, in quarters
  • 4 guajillo chiles, deveined
  • 2 pasilla chiles, deveined
  • 4 tomatoes, in halves
  • 1 clove garlic
  • 1 cup vegetable broth
  • 2 tablespoons achiote, (10 g)
  • 4 cups cauliflower, cooked and in small pieces
  • salt and pepper
  • 12 corn tortillas
  • 1/4 cups onion, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • 1/4 cups pineapple, grilled, finely chopped
  • green salsa, or red
  • 2 limes, in halves

  • For the sauce, in a medium saucepan, fry the onion, chiles, tomato, and garlic in oil until the tomatoes start to break down. Add the vegetable broth and let it reduce. Blend with the achiote until you obtain a sauce.
  • In a deep skillet, sauté the cauliflower with a little oil until browned. Add the sauce, cook for a few minutes, and season with salt and pepper.
  • Serve the cauliflower on warm tortillas and garnish with onion, cilantro, pineapple, sauce, and limes, enjoy.
