Boil the cauliflower in one liter of water with salt and a chicken broth cube. Leave it over medium heat for 10 minutes or until the cauliflower is tender.
In a deep plate, add the cup of mayonnaise, the juice of the lemons, and the eggs.
When the cauliflower is done cooking, drain all the water and place the dry cauliflower in a rectangular dish.
Spread the mixture on top and sprinkle with grated manchego cheese.
Place the dish in the microwave for about 10 minutes or until the cheese is melted and the mixture looks thick.
