Gratinated Cauliflower

Delicious recipe for gratinated cauliflower with manchego cheese, it is an ideal side dish to accompany red meats. You can also serve it instead of salad.

  • 1 cauliflower, large
  • 1 cup mayonnaise, natural or with lemon
  • 2 eggs
  • 2 limes, its juice
  • 200 grams Manchego cheese
  • 1 cube chicken broth
  • 1/2 liters water

  • Boil the cauliflower in one liter of water with salt and a chicken broth cube. Leave it over medium heat for 10 minutes or until the cauliflower is tender.
  • In a deep plate, add the cup of mayonnaise, the juice of the lemons, and the eggs.
  • When the cauliflower is done cooking, drain all the water and place the dry cauliflower in a rectangular dish.
  • Spread the mixture on top and sprinkle with grated manchego cheese.
  • Place the dish in the microwave for about 10 minutes or until the cheese is melted and the mixture looks thick.
