Homemade Chipotle Chiles in Marinade

The marinated chipotle chiles are delicious and are a very popular preparation in Mexico, used to accompany tortas, sandwiches, quesadillas, among other dishes. Make your own homemade chipotles with this rich and easy recipe made from cooking in water with piloncillo, submerged in a spiced marinade. You will love it!

  • 12 cups water, 3 liters
  • 1/4 cups piloncillo
  • 30 chipotle chiles, without stem
  • 1 tomato, for marinade
  • 4 cloves garlic, for marinade
  • 1/4 onions, for marinade
  • 1 tablespoon oregano, for marinade
  • 1 leaf bay, for marinade
  • 1 teaspoon cumin, whole for marinade
  • 1 teaspoon cloves, for marinade
  • 1 teaspoon allspice berry, whole for marinade
  • 1 teaspoon marjoram, for marinade
  • 1/4 cups white vinegar, for marinade
  • 1 pinch salt
  • 1 tablespoon vegetable oil
  • 1 cup onion, sliced

  • Heat a small pot over medium heat with the water and piloncillo until dissolved, cook the chiles until fully hydrated, about 40 minutes. Strain and reserve 5 chiles with a little of the cooking water for the marinade, reserve the remaining chiles separately.
  • Heat a comal over high heat, roast the tomato, garlic, onion, oregano, bay leaf, cumin, clove, and allspice until fragrant, taking care not to burn them.
  • For the marinade, blend the chiles and the reserved water, add the roasted ingredients, oregano, white vinegar, and salt to taste.
  • Heat a small pot over medium heat with the oil, fry the onion until transparent, add the marinade, cook for 5 minutes, and add the whole chipotle chiles, cook for 10 minutes, reserve the preparation in a glass jar and cool, serve your chiles in the dish you like the most. Enjoy.
