Ingredients: 12 cups water, 3 liters; 1/4 cups piloncillo; 30 chipotle chiles, without stem; 1 tomato, for marinade; 4 cloves garlic, for marinade; 1/4 onions, for marinade; 1 tablespoon oregano, for marinade; 1 leaf bay, for marinade; 1 teaspoon cumin, whole for marinade; 1 teaspoon cloves, for marinade; 1 teaspoon allspice berry, whole for marinade; 1 teaspoon marjoram, for marinade; 1/4 cups white vinegar, for marinade; 1 pinch salt; 1 tablespoon vegetable oil; 1 cup onion, sliced

Heat a small pot over medium heat with the water and piloncillo until dissolved, cook the chiles until fully hydrated, about 40 minutes. Strain and reserve 5 chiles with a little of the cooking water for the marinade, reserve the remaining chiles separately. Heat a comal over high heat, roast the tomato, garlic, onion, oregano, bay leaf, cumin, clove, and allspice until fragrant, taking care not to burn them.
