Pickled Peppers

If you really like pickled peppers, make your own at home. This recipe is free of preservatives and is very easy to prepare. Pickled peppers are delicious and very simple to make.

  • 5 tablespoons vegetable oil
  • 1 onion, sliced thinly
  • 1 cup carrot, sliced thinly
  • 20 Jalapeño chiles, cut into strips
  • 5 leaves bay
  • 5 allspice berries
  • 2 cloves garlic, peeled
  • 2 tablespoons coarse salt
  • 3 cups water
  • 1 cup apple cider vinegar

  • Heat the oil in a medium pot over medium heat. Add the onion and sauté for 2 minutes.
  • Add the carrot and cook for 3 more minutes. Add the peppers, bay leaf, allspice, garlic, coarse salt, and cook for 10 minutes.
  • Incorporate the vinegar, water, and continue cooking over medium heat for another 15 minutes.
