  • 1 1/2 cups vegetable broth, (low sodium) or water
  • 1 cup quinoa, well rinsed and drained
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper
  • 1 cup mixed vegetables, frozen (carrot, pea, corn, etc.)

  • Add the vegetable broth or water to a medium pot over medium heat, and bring to a boil.
  • Add the quinoa, salt, and pepper, reduce to low heat, cover the pot with a lid. Cook until the liquid has evaporated and the quinoa is tender, about 15 minutes. Remove the lid, add the vegetables, and stir with a fork. Cover again to let the vegetables steam with the quinoa.
