Creamy Ham-Stuffed Chayotes

  • 2 chayotes, peeled and halved
  • 1 cup deli ham, diced
  • 1 cup low-fat cream
  • 1 cup Manchego cheese, grated, divided

  • 4 teaspoons butter

  • Preheat the oven to 200°C.
  • Heat a pot with water and salt over medium heat, cook the chayotes for 15 minutes, when they are soft, remove from heat, cool, and set aside.
  • Place the chayotes on a cutting board and, using a spoon, scoop out the center of the chayote and set the pulp aside.
  • In a bowl, mix the ham with the chayote pulp, the cream, half of the cheese, and season with salt and pepper. Fill the chayotes with this mixture.
  • Place them in a baking dish, add the remaining grated cheese, and place a cube of butter on each chayote. Bake for 10 minutes or until the cheese is bubbly and the butter has melted.
  • Serve hot.
