Delicious Mexican Green Beans

These Mexican green beans will be the perfect side dish to accompany your meals and a very practical way to include vegetables in your meals. The recipe is super homemade and low in calories, plus it could be just what you need on that day of the week when you avoid eating meat. Once the green beans are cooked, we suggest immersing them in ice water to stop the cooking process.

  • 2 cups green beans
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 1/4 onions
  • 5 tomatoes
  • 1 clove garlic
  • 2 morita chiles
  • 2 guajillo chiles
  • 1/4 cups chicken broth
  • pinches salt
  • pepper
  • 1 teaspoon vegetable oil
  • 1/2 onions, sliced
  • 1/2 cups ear corn
  • queso fresco, crumbled, for garnish
  • parsley, in leaves, for garnish

  • In a pot with water, cook the green beans with baking soda and salt. Drain and set aside.
  • In a griddle, roast the onion, tomatoes, garlic, morita chili, and guajillo chili.
  • Blend with chicken broth, salt, and pepper.
  • In a skillet, add the oil, onion, and sauce and cook for 15 minutes, then add the green beans and corn, and cook for another 5 minutes.
  • Serve, garnish with fresh cheese and parsley. Enjoy.
