Huitlacoche Quesadillas

Delicious huitlacoche quesadillas super easy to prepare that you will end up loving for their delicious flavor. Huitlacoche, or cuitlacoche, is an edible fungus found on corn. Currently, it is a sophisticated ingredient used in Mexican cuisine, and although in other countries it is still considered a pest, in Mexico it is consumed in many ways, especially accompanied by tortillas, like these delicious huitlacoche quesadillas with quesillo.

  • 1/2 kilos masa dough
  • 4 cups huitlacoche, fresh or canned
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil
  • pepper, to taste

  • Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
  • Add half of the onion and the garlic and sauté for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep plate.
  • With a tortilla press, make tortillas with the tortilla dough.
  • Fill the tortillas with a bit of Oaxaca cheese and the huitlacoche filling. Seal the quesadilla well with your fingers.
  • Cook the quesadillas either on a griddle (if you want them without fat) or in oil if you prefer them fried.
