Huitlacoche Tacos

Huitlacoche tacos are a delight. I made them with cheese, but if you prefer, you can leave it out and just have the huitlacoche.

  • 12 corn tortillas
  • 4 cups huitlacoche, fresh or canned
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil
  • pepper, to taste

  • Start by preparing the filling. Heat one tablespoon of vegetable oil in a medium-sized skillet.
  • Add half of the onion and the garlic and sauté for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and transfer to a deep plate.
  • Heat the tortillas and fill them with a bit of Oaxaca cheese and the huitlacoche filling.
