Zucchini Flower and Huitlacoche Flautas

The flautas are filled with Oaxaca cheese and zucchini flowers. This is a commonly used filling in Mexico for quesadillas.

  • 2 bunches zucchini blossoms
  • 300 grams Oaxaca cheese
  • 1 clove garlic
  • 1/2 onions, chopped
  • pepper, to taste
  • 12 tortillas
  • vegetable oil, for frying

  • Start by preparing the filling. Heat one tablespoon of vegetable oil in a medium-sized skillet.
  • Add the onion and garlic and sauté for 2-3 minutes. Add the zucchini flowers and cook for 5 minutes or until well cooked. Season with salt and pepper and set aside.
  • Fill the tortillas with a bit of Oaxaca cheese and the zucchini flower filling. Make the tacos; you can use a toothpick to keep the flautas from falling apart.
  • Heat oil in a skillet and fry the flautas.
