Start by preparing the filling. Heat one tablespoon of vegetable oil in a medium-sized skillet.
Add the onion and garlic and sauté for 2-3 minutes. Add the zucchini flowers and cook for 5 minutes or until well cooked. Season with salt and pepper and set aside.
Fill the tortillas with a bit of Oaxaca cheese and the zucchini flower filling. Make the tacos; you can use a toothpick to keep the flautas from falling apart.
Heat oil in a skillet and fry the flautas.
