Moroccan Chickpeas and Vegetables with Yoghurt Sauce

  • 1 cup FAGE® Total 0% greek style yogurt
  • 1/4 cups sunflower oil
  • 1/2 onions, peeled and sliced thin
  • 2 cloves garlic, peeled and finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin, , cinnamon and turmeric
  • 1/4 teaspoons cayenne pepper
  • 1 3/4 cups chickpeas
  • 1 3/4 cups tomatillo, chopped
  • 1 1/4 cups vegetable broth
  • 1/2 cups zucchini, diced
  • 1/4 cups corn
  • 1/4 cups sugar
  • 1/4 cups baby carrot
  • 4 teaspoons fresh parsley, chopped and cilantro
  • salt, and pepper to taste

  • Heat half of the oil in a pan. Add the onion, garlic, and spices. Fry over medium heat for five minutes until golden.
  • Add the chickpeas, tomatoes, and broth. Cook for 20 minutes.
  • Stir the vegetables and fry in a separate pan with the remaining oil, add to the chickpea mixture.
  • Bring to a boil, cover, and simmer for 20 minutes.
  • To finish, add half of the FAGE® Total 0% Greek Style Yoghurt, season to taste, and serve.
  • For the FAGE® Total 0% Greek Style Yoghurt dressing with herbs, mix the remaining FAGE® Total 0% Greek Style Yoghurt, chopped parsley, and cilantro.
