This stew takes a little while to prepare, but it is very tasty once it is done. Try making this lentil recipe with sautéed Swiss chard and mushrooms for a family day.
We place the lentils, the whole onion, the peeled carrot, the cleaned and whole leek, the whole green pepper without seeds, and the peeled whole garlic cloves in a pot with cold water, covering them with double their volume of water. We let it boil uncovered for an hour.
We remove the vegetables from the lentils and blend them.
We add this vegetable puree back to the lentil cooking for another 30 minutes. We season with salt.
We cook the Swiss chard in boiling water, refresh once cooked, and separate the leaves from the stalks.
We sauté the leaves with oil and garlic, add some sliced mushrooms, and sauté the mixture.
At the moment of serving, we add the sautéed Swiss chard and mushrooms on top of the lentils.
