We place the lentils, the whole onion, the peeled carrot, the cleaned and whole leek, the whole green pepper without seeds, and the peeled whole garlic cloves in a pot with cold water, covering them with double their volume of water. We let it boil uncovered for an hour. We remove the vegetables from the lentils and blend them. We add this vegetable puree back to the lentil cooking for another 30 minutes. We season with salt.
