Pickled Red Onions

These onions are perfect for accompanying grilled or pan-seared meats. The sweet and tangy flavor of these onions will make them memorable for a long time.

  • 1 red onion
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 1 teaspoon pepper, whole
  • 1 teaspoon oregano
  • 1/4 teaspoons ground cumin
  • 4 cloves
  • 3 cloves garlic, peeled and cut in half lengthwise
  • 1 1/2 cups wine vinegar

  • Peel the onion, cut it in half, and then slice it into thin wedges.
  • In a bowl, mix the salt, sugar, and onion together, adding a couple of tablespoons of water, and let it sit until the onion releases some of its liquid, about 15 minutes.
  • Place in a glass jar along with the peppercorns, oregano, cumin, cloves, and garlic, then pour in the vinegar.
  • Seal and refrigerate for at least 4 to 6 hours before using, so that the preparation absorbs the aromas of the spices.
