Quinoa and Beet Burgers

  • 1 1/2 tablespoons olive oil
  • 1 cup quinoa, cooked
  • 1 potato, cooked and peeled
  • 1 beet, cooked and grated
  • 3/4 cups spinach, cut into strips
  • 1/2 cups oats, in flakes
  • 1 teaspoon fresh ginger, ground
  • 1 teaspoon garlic, ground
  • 1/4 cups goat cheese
  • salt and pepper

  • In a bowl, mash the potatoes to create a puree and add all the ingredients except for the olive oil.
  • Form the burgers with the previous mixture and place them on a tray and refrigerate for 15 minutes.
  • Heat a skillet and add olive oil, fry the burgers until golden brown.
  • Serve hot.
