Spinach Tart with Oats

Your mornings will never be the same with this delicious and nutritious breakfast, a spinach tart with oats, mushrooms, and bacon with a crispy crust, gratinated with mozzarella cheese.

  • 2 1/2 cups Multibran Quaker® mixed grains, for the base
  • 1/2 cups Quaker® old fashioned oats
  • 1/4 cups butter, for the base
  • 1/2 cups bacon, cut into small cubes
  • 1/4 onions, finely chopped
  • 2 cups spinach
  • 1 cup button mushrooms
  • 3 eggs
  • 1/4 cups sour cream
  • 1 cup Mozzarella cheese
  • salt and pepper

Low
  • Preheat the oven to 160°C.
  • Add Multibran Quaker® mixed grains with Quaker® Old Fashioned Oats in a processor and process for 3 minutes.
  • In a bowl, mix the above with the butter until you obtain a homogeneous mixture, place it on a mini tart base, pressing to compact. Set aside.
  • In a skillet over medium heat, add the bacon, cook for 10 minutes or until it releases its fat, add the onion, mushrooms, and spinach, season with salt and pepper, and cook until the juice from the vegetables evaporates. Let cool and set aside.
  • Beat the eggs with the cream, season with salt and pepper. Set aside.
  • Add the spinach mixture over the tart bases, pour the egg to cover, and finally, add the cheese.
  • Bake for 15 minutes.
  • Serve hot and accompany with juice and fruit.
