Spinach Pudding in Microwave

For when friends arrive unexpectedly at lunchtime, you can prepare this quickly, and they will enjoy it because it is delicious and can be served immediately; you won't need a conventional oven, with the microwave everything will be ready without much hassle.

  • 3 bunches spinach, chopped
  • 6 eggs
  • 1 cup evaporated milk
  • 1 package cream cheese
  • 1/2 cups flour
  • salt, to taste
  • pepper, to taste
  • vegetable oil

  • Grease individual microwave-safe molds or a pie dish or rectangular mold. Set aside.
  • Place the spinach in a plastic bag, seal it tightly, and cook it in the microwave for 1 minute. Remove from the microwave and drain.
  • In a separate bowl, blend the evaporated milk with the eggs, cheese, flour, and season with salt and pepper.
  • Gently fold in the spinach. Pour some of this mixture into the molds, or into a round or rectangular pie dish.
  • Cover with cling film and make a few small holes to allow steam to escape: microwave for 10 minutes or until a toothpick inserted comes out clean.
