Wash and disinfect the Swiss chard well and drain the excess water. *Separate the chard leaves from the stems and microwave for 10 seconds to soften.
Blend the tomatoes with 1/4 onion, garlic, epazote, and chicken bouillon powder.
Pour into a pan over low heat and add the serrano peppers to cook in the sauce.
For the filling, sauté the chopped onion with the mushrooms, chopped epazote, and corn kernels, adding salt and pepper to taste.
Prepare the rolls with the Swiss chard leaves, filling, and small pieces of cheese.
Seal the rolls with toothpicks and immerse them in the tomato sauce.
Let simmer on low heat for 10 minutes. Serve with a bit of sour cream.
