Stuffed Swiss Chard Rolls with Mushrooms

Swiss chard rolls stuffed with mushrooms, corn, and cheese in tomato sauce. A delicious dish perfect for family meals. You can serve them with a bit of white rice.

  • 15 leaves chard, large
  • 4 tomatoes
  • 1 onion
  • 250 grams Oaxaca cheese
  • 1 clove garlic
  • 6 serrano chiles
  • 1 can corn kernels
  • 1 sprig epazote
  • sour cream
  • 2 tablespoons olive oil
  • granulated chicken bouillon
  • salt and pepper

  • Wash and disinfect the Swiss chard well and drain the excess water. *Separate the chard leaves from the stems and microwave for 10 seconds to soften.
  • Blend the tomatoes with 1/4 onion, garlic, epazote, and chicken bouillon powder.
  • Pour into a pan over low heat and add the serrano peppers to cook in the sauce.
  • For the filling, sauté the chopped onion with the mushrooms, chopped epazote, and corn kernels, adding salt and pepper to taste.
  • Prepare the rolls with the Swiss chard leaves, filling, and small pieces of cheese. Seal the rolls with toothpicks and immerse them in the tomato sauce.
  • Let simmer on low heat for 10 minutes. Serve with a bit of sour cream.
