Stuffed Zucchini with Pico de Gallo

  • 4 zucchinis
  • 2 tomatoes
  • 2 cloves garlic
  • 1/2 onions
  • 2 serrano chiles
  • 30 grams fresh cilantro
  • 1/2 teaspoons granulated chicken bouillon
  • 1 pinch salt
  • 1 pinch black pepper
  • fresh white cheese
  • 1 tablespoon unsalted butter

  • Cook the zucchini until soft and remove the pulp from the center.
  • Finely chop the cilantro, tomato, onion, garlic, and chilies.
  • In a skillet, melt the butter, add the onion with the garlic and serrano chili.
  • Once the onion is almost transparent, add the tomato and cilantro.
  • Once everything is mixed, season with chicken bouillon powder, salt, and black pepper. Let it cook on low heat for 10 minutes.
  • Stuff the zucchini and add the white cheese on top. Serve.
