Quick Sweet Potato Mash

This sweet potato mash recipe does not contain sugar and is a quick side dish for any meat, chicken, or fish. Sweet potatoes are very high in vitamin A and also contain good amounts of potassium.

4 sweet potatoes, medium-sized, peeled, and cubed
1 tablespoon butter
3 cloves garlic, mashed
1/2 cups light milk
2 tablespoons sour cream, or heavy cream
salt, and pepper to taste

In a large pot, bring the sweet potatoes to a boil in salted water until soft. Drain and set aside.
Melt the butter and cook the garlic until golden. Add the cooked potatoes to the pan, then add the milk and cream. Season with salt and pepper.
Mash in the same pan or place in a food processor to blend.
