Sweet Potato Lasagna

  • 1 cup whipping cream
  • 1/4 cups Manchego cheese
  • 1/4 cups cheddar cheese
  • 1/4 cups Parmesan cheese
  • 1 teaspoon garlic powder
  • salt and pepper
  • 4 yellow sweet potatoes
  • 1 cup cheese, mix, for gratin

  • Preheat the oven to 180°C.
  • For the sauce, heat the heavy cream in a small pot and add the manchego cheese, cheddar cheese, parmesan cheese, garlic powder, season with salt and pepper, and cook for 5 minutes.
  • Peel the sweet potatoes and cut them into thin slices lengthwise.
  • Place the sweet potatoes in a baking dish, add the cheese cream, and repeat the process until the dish is full, finishing with a mix of cheeses.
  • Bake for 40 minutes or until the sweet potatoes are cooked. Serve.
  • Serve with a salad.
