Sweet Potato Puree with Bacon

  • 3 sweet potatoes, orange
  • 300 grams bacon, fried and finely chopped
  • 2 pinches nutmeg
  • 2 liters water
  • 50 grams unsalted butter
  • 150 milliliters cow's milk
  • 100 milliliters cream
  • 20 grams salt
  • 5 grams pepper

  • Boil the sweet potato with the skin in water until it is well cooked, remove the skin and mash it.
  • Heat a pan and add the butter, then incorporate the processed sweet potato and adjust the consistency with milk and cream. Lower the temperature and season with nutmeg, salt, and pepper.
  • To serve: place the puree in a baking dish, cover it with the fried bacon.
