Sweet Potato with Herbs

This side dish is ideal to serve with dishes such as couscous, baked chicken, or grilled beef cuts. The sweet potato, due to its high nutritional value, prevents stomach cancer, liver diseases, and slows down aging, according to the International Potato Center (CIP).

  • 2 yellow sweet potatoes
  • 10 sprigs chives
  • 1 sprig fresh rosemary
  • 2 limes, real
  • 4 sprigs fresh thyme
  • 1 pinch garlic
  • 1 pinch coarse salt
  • 1 pinch pepper
  • 1 tablespoon olive oil

  • Preheat the oven to 200°C and line a glass baking dish with parchment paper.
  • Wash the sweet potatoes, cut them in half, and obtain thin slices.
  • Chop the scallions, remove the leaves from the rosemary, and slice one of the lemons.
  • Arrange the slices of sweet potato and lemon in the baking dish.
  • Squeeze the juice of the other lemon on top and add the scallions, rosemary, and thyme.
  • Sprinkle with garlic and season with salt and pepper.
  • Drizzle olive oil over the sweet potato, close the parchment paper, and bake for 20 minutes at 180°C.
