These sweet potato bites with hummus are an ideal and very original side dish to make the most of the sweet potato season. Don't miss out on preparing them this autumn and impress your family and guests.
Cook the whole unpeeled sweet potatoes in a pot of water for about 20 minutes.
Preheat the oven to 110°C.
Remove the sweet potatoes from the pot and immerse them in a bowl of ice water.
Cut the sweet potatoes in half to create little boats. Using a spoon, scoop out some of the sweet potato flesh, but not all of it.
In a food processor, combine half a package of Libanus original flavor Hummus with the sweet potato flesh. Add honey and cayenne pepper. You can season with salt and pepper to taste. Process for a few seconds; it doesn’t need to be completely smooth. The chunks of sweet potato add a nice texture.
Fill the sweet potato boats with the mixture you just made. Bake for 10-15 minutes in the oven.
While the sweet potatoes are in the oven, fry the bacon in a skillet or in the microwave. Once done, remove excess fat with a paper towel and break into pieces.
Take the sweet potatoes out of the oven, sprinkle with bacon bits, and garnish with a teaspoon of sour cream or unsweetened Greek yogurt.
Serve warm and enjoy.
