These little sweet potatoes with hummus are an ideal and very original garnish to take advantage of the sweet potato season. Do not miss out on preparing it this fall and be happy with your family and guests.

  • 4 sweet potatoes
  • 1 package Hummus Libanius®
  • 150 grams bacon, smoked, to decorate
  • to taste greek yogurt, or cream to decorate
  • 1 tablespoon Maple syrup
  • 1 teaspoon Cayenne pepper


Cook whole unpeeled sweet potatoes in a pot with water for approximately 20 minutes.
Preheat the oven to 110 ° C.
Remove the sweet potatoes from the pot and dip in a bowl of ice water.
Split the sweet potatoes into 2 so that they are like boats. With a spoon, remove some of the pulp from the sweet potato, without removing everything.
In a processor, it incorporates half a pack of Hummus brand Libanus original flavor along with the sweet potato pulp. Add honey and cayenne pepper. You can season to taste. Process a few seconds, it does not have to be homogeneous. The pieces of sweet potato give it a rich texture.
Fill the sweet potato boats with the mixture you just made. Bake for 10-15 minutes in the oven.
While the sweet potatoes are in the oven, fry the bacon in a pan or microwave. Once done, remove the excess fat with a servitoalla and break into pieces.
Remove the sweet potatoes from the oven, sprinkle with the bacon pieces and decorate with a teaspoon of sour cream or Greek yogurt without sugar.
Serve warm and enjoy.
