Heat the water over medium heat until boiling and cook the zucchinis with salt for one minute. Remove and immediately immerse in ice water. Drain and dry.
On a cutting board, place a slice of zucchini, add cheese, ham, dredge in flour and set aside.
Beat the egg whites with salt to soft peaks and add the yolks one by one. Continue beating until well combined.
Heat the oil over medium heat, dip the floured zucchinis in the egg mixture and fry immediately. Drain on paper towels.
