Breaded Zucchini Stuffed with Ham and Cheese

  • 3 zucchinis, cut into thick slices
  • water
  • salt
  • 10 slices deli ham
  • 10 slices panela cheese, thick
  • 1 cup flour
  • 3 egg whites
  • 1 pinch salt
  • 3 egg yolks
  • 1 cup vegetable oil, for frying

  • Heat the water over medium heat until boiling and cook the zucchinis with salt for one minute. Remove and immediately immerse in ice water. Drain and dry.
  • On a cutting board, place a slice of zucchini, add cheese, ham, dredge in flour and set aside.
  • Beat the egg whites with salt to soft peaks and add the yolks one by one. Continue beating until well combined.
  • Heat the oil over medium heat, dip the floured zucchinis in the egg mixture and fry immediately. Drain on paper towels.
  • Serve.
