If you are watching your figure but want something delicious that will give you energy all day, you have to try these stuffed zucchinis with chicken accompanied by the delicious homemade Mexican sauce La Costeña®; it will give them a spicy and homemade touch. Your family will love this tasty dish!
On a cutting board, use a knife to cut off the top of the zucchinis and scoop out the insides with a spoon. Reserve the filling.
In a skillet, sauté the onion and garlic in olive oil, add the chicken, and season with salt and pepper; cook until golden.
Add the poblano pepper, La Costeña® corn kernels, the filling from the zucchini, the tomato, and the puree; cook for 5 more minutes. Season with cumin, oregano, salt, and pepper to your taste.
Fill the zucchinis with the previous preparation, cover with breadcrumbs and manchego cheese. Place on a baking tray and bake for about 15 minutes or until the cheese is melted and the zucchinis are tender.
In a pot over medium heat, heat the homemade Mexican sauce La Costeña® until it comes to a boil. Reserve.
Serve some sauce on a deep plate as a mirror and place a zucchini on top.
