Zucchini with Bacon and Cheese

Zucchini is an inexpensive vegetable that is easily available and, due to its subtle flavor, pairs well with many other ingredients. This recipe for zucchini with bacon and cheese is easy to make, yields a lot, and can be served as a side dish with any main course.

  • 4 pumpkins
  • vegetable oil
  • 1 cup onion, chopped
  • 1 tablespoon garlic, chopped
  • 2 cups bacon, chopped
  • salt
  • pepper
  • 4 tablespoons sour cream
  • 2 cups Manchego cheese, grated

  • Cut the zucchini into medium cubes.
  • Heat a skillet over medium heat, pour in a bit of oil, and cook the onion and garlic. Wait a couple of minutes and add the bacon, cooking for 5 more minutes until slightly browned. Then add the zucchini and cook for 8 more minutes, and don't forget to season with salt and pepper.
  • Remove the skillet from the heat and pour the zucchini into a baking dish or oven-safe mold.
  • Add the cream and grated cheese to the zucchini.
  • Melt in the microwave for 2 minutes.
  • Enjoy the zucchini with bacon and cheese on its own or with your favorite dish.
