Zucchini with Vinaigrette

What better side dish than zucchinis with vinaigrette? You can serve them as a salad or even at a dinner you want to be nutritious and low in fat.

  • 4 zucchinis
  • 2/3 cups vegetable oil
  • 1/3 cups vinegar
  • 3 tablespoons chives, chopped
  • 1 teaspoon sugar
  • salt
  • pepper

  • Cut the zucchinis into julienne strips and boil them in water for about 5 minutes or until they are tender. Once ready, transfer them to a bowl with ice to set the color.
  • Mix all the other ingredients to make the vinaigrette.
  • Just at the moment of serving, add the vinaigrette to the zucchinis.
