What better garnish than zucchini with vinaigrette, you can serve as a salad or even a dinner you want to be nutritious and low in fat.

Ingredients

6 portions
  • 4 zucchini
  • 2/3 cups oil
  • 1/3 cups vinegar
  • 3 tablespoons chives, chopped
  • 1 teaspoon sugar
  • salt
  • black pepper

Preparation

Cut the pumpkins into julienne strips and cook them with water for 5 minutes or until they are tender. Once ready, pass them to a bowl with ice to fix the color.
Mix all the other ingredients to make the vinaigrette.
Just at the moment of serving, put the vinaigrette to the pumpkins.
