What better garnish than some zucchini with vinaigrette, you can serve them as a salad or even in a dinner that you want to be nutritious and low in fat.

Ingredients

6 portions
  • 4 zucchini
  • 2/3 cups oil
  • 1/3 cups vinegar
  • 3 tablespoons chives, chopped
  • 1 teaspoon sugar
  • salt
  • pepper

Preparation

Cut the squash into julienne strips and cook them with water for about 5 minutes or until tender. Once ready, put them in a bowl with ice to fix the color.
Mix all the other ingredients to make the vinaigrette.
Just when serving, add the vinaigrette to the pumpkins.
