  • 2 cups white rice
  • 3 carrots, cut into small cubes
  • 2 pumpkins, cut into small cubes
  • 1 tablespoon olive oil
  • 200 grams meat, for grilling, chopped into small pieces
  • 200 grams chicken breast, chopped into small pieces
  • 200 grams shrimp, chopped into small pieces
  • 1/3 cups soy sauce
  • 4 cups water
  • 1/4 onions, finely chopped
  • 1/2 kilos surimi, finely chopped, for the tampico
  • 1/2 sticks cream cheese
  • 2 tablespoons mayonnaise
  • 2 green onions, finely chopped (including the stems)

  • For the rice: Sauté the rice in the oil, when it is slightly golden add the 4 cups of water. Wait for it to boil, cover, and lower the heat.
  • Wait for the water to completely evaporate, making sure the rice doesn't stick, and turn off the heat.
  • In a pan, first fry the chicken with a little salt, set aside. In the same pan, fry the meat with a little salt, set aside. Finally, fry the shrimp with very little salt and set aside.
  • Add the onion and sauté for a moment.
  • Then add the carrot and a minute later add the zucchini.
  • Incorporate all the meats, being careful not to cook the vegetables too much so they stay crunchy. Add the rice and mix, pour in the soy sauce and integrate. Turn off when all the rice has the color of the sauce.
  • Tampico: With a fork or your fingers, shred the surimi finely.
  • In a bowl, mix the mayonnaise, cream cheese, and green onions. Adjust salt and add more if necessary.
