Zucchini Gratin Mexican Style

  • 1/4 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 serrano chiles, sliced
  • 1 cup yellow corn kernels
  • 1 tablespoon epazote, finely chopped
  • 2 cups zucchini, sliced
  • olive oil

  • 3/4 cups tomato purée
  • 1 1/2 cups Manchego cheese, grated
  • 2 cups panela cheese, sliced
  • 2 cups tomato, sliced

  • Preheat the oven to 180 °C.
  • In a bowl, mix the onion with the garlic, serrano chili, yellow corn, and epazote.
  • In a baking dish, place a layer of sliced zucchini, add the corn mixture, pour in the olive oil, salt, and pepper. Add the tomato puree, Manchego cheese, and slices of panela cheese.
  • Repeat the above until reaching the layer of Manchego cheese and add the slices of tomato instead of the panela cheese. Repeat the process until finishing the baking dish, covering with Manchego cheese and bake for 20 minutes at 180 °C.
  • Remove from the oven and serve immediately.
