Zucchini Gratin with Easy Tomato Sauce

A simple grandma's recipe; zucchini with a sauce of Natural Tomato Puree from El Fuerte® and topped with delicious Oaxaca cheese. It's perfect to pamper your family! Prepare it, you will love it!

  • 2 teaspoons olive oil
  • 1 onion, sliced
  • 2 cups cherry tomato, for filling and for garnish
  • 4 cups zucchini, cut into medium cubes
  • 1 cup Del Fuerte® tomato puree
  • 1 pinch oregano
  • 1 pinch salt
  • 1 pinch pepper
  • 1 teaspoon thyme
  • 1 cup Oaxaca cheese, shredded

  • Preheat the oven to 180° C.
  • Add sliced onion in a deep bowl, alternating with cubed zucchini and cherry tomatoes, add a little oil to help with cooking and the Natural Tomato Puree from El Fuerte®, add the spices, mix, and season. Bake for 15 minutes covered with aluminum foil until the zucchini is tender.
  • Remove from the oven and add the Oaxaca cheese to melt with the zucchini and it will be ready when the cheese is soft.
