Alphabet Soup with Meatballs

This alphabet soup with meatballs is ideal for children, as it is a complete, delicious meal, easy to prepare and full of flavor.

  • 500 grams ground beef
  • 1/2 cups breadcrumbs, for the meat
  • 1 egg, for the meat
  • 1/4 cups parsley, for the meat
  • salt, for the meat
  • pepper, for the meat
  • vegetable oil, for the meat
  • 1/4 onions
  • 1 clove garlic
  • 5 tomatoes, in quarters
  • water

  • 1 package Alphabet soup La Moderna® kids
  • 2 liters vegetable broth
  • 1 cup carrot, in small cubes
  • cilantro, finely chopped

  • Mix the ground beef, breadcrumbs, egg, and parsley in a bowl. Season with salt and pepper.
  • Form balls of approximately 15 g and refrigerate for 30 minutes.
  • Heat a saucepan over medium heat with vegetable oil and fry the meatballs for 3 minutes, just to seal the outside. Remove from heat and set aside.
  • Blend the onion, garlic, tomato, water, and a little salt and pepper. Strain and set aside.
  • Heat a pot or saucepan over medium heat, add a little oil and brown the La Moderna® kids Alphabet Soup for 2 minutes, or until it darkens a bit. Then add the blended tomato and let it reduce for 5 minutes, then add the vegetable broth, carrots, and meatballs, cook for approximately 8 minutes. Season with salt and pepper if necessary.
  • Finally add chopped cilantro, remove from heat and serve warm.
