Mix the ground beef, breadcrumbs, egg, and parsley in a bowl. Season with salt and pepper. Form balls of approximately 15 g and refrigerate for 30 minutes. Heat a saucepan over medium heat with vegetable oil and fry the meatballs for 3 minutes, just to seal the outside. Remove from heat and set aside. Blend the onion, garlic, tomato, water, and a little salt and pepper. Strain and set aside. Heat a pot or saucepan over medium heat, add a little oil and brown the La Moderna® kids Alphabet Soup for 2 minutes, or until it darkens a bit. Then add the blended tomato and let it reduce for 5 minutes, then add the vegetable broth, carrots, and meatballs, cook for approximately 8 minutes. Season with salt and pepper if necessary. Finally add chopped cilantro, remove from heat and serve warm.
