Andalusian Gazpacho

Delicious cold soup of tomato, red pepper, cucumber, and red onion.

  • 1 cucumber, chopped and seedless (unpeeled)
  • 2 red bell peppers, chopped and seedless
  • 4 tomatoes, large red
  • 3 cloves garlic
  • 3 cups tomato juice
  • 1/4 cups white wine vinegar
  • 1/4 cups olive oil
  • 1/2 tablespoons salt
  • 1 teaspoon pepper

  • Chop the cucumbers, red peppers, tomatoes, and red onion into cubes of about 2 cm.
  • Put each vegetable separately in the processor and pulse until finely chopped.
  • After chopping each vegetable, mix in a bowl and add garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and refrigerate for at least about 3 hours.
  • Serve with diced cucumbers, croutons, and a few drops of olive oil.
