Artichoke and Asparagus Soup

This recipe is a delicious artichoke and asparagus soup that you can enjoy as the start of a nice meal. It is for the whole family while maintaining its nutritional elements for good health.

  • 2 cups water of roses
  • 1 teaspoon salt
  • 1 1/2 cans asparagus, bunch, fresh
  • 1 cup water of roses
  • 1 cup ice cubes
  • 6 artichoke
  • 12 artichoke hearts, washed fresh
  • 1 liter chicken broth
  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil
  • 1/2 green onions , finely chopped
  • 1 clove garlic, chopped
  • 1 cup white wine
  • 1 teaspoon black pepper powder
  • 1 teaspoon salt
  • 1/2 cups goat cheese

  • Cook the asparagus in enough salted water, once ready, drain them, and transfer them to a bowl of ice water for a couple of minutes.
  • Separate one-fourth and reserve the end.
  • Remove the leaves from the artichokes, separate the heart, and place everything in the blender.
  • Add half of the chicken broth, blend, add the asparagus, season with salt and pepper.
  • Blend with the rest of the chicken broth.
  • In a saucepan, heat the butter and olive oil, sauté the garlic and onion.
  • Then add the reserved asparagus, white wine, and artichoke mixture.
  • Season with salt and pepper.
  • Remove from heat and blend 3/4 of this mixture.
  • Place it back on the heat and adjust the seasoning.
  • Serve hot.
