This recipe is a delicious artichoke and asparagus soup which you can enjoy as a start of a good meal. It is for the whole family and always keeping their food elements for good health.

Ingredients

4 servings
  • 2 cups of rose water
  • 1 teaspoonful of table salt
  • 1 1/2 cans of asparagus tied, fresh
  • 1 Cup of rose water
  • 1 Cup of ice
  • 6 artichoke
  • 12 artichoke hearts fresh washed
  • 1 liter of chicken soup
  • 1 tablespoon of Butter
  • 2 spoonfuls of olive oil
  • 1/2 green onion fine chopped
  • 1 clove of garlic chopped
  • 1 Cup of White wine
  • 1 teaspoonful of ground pepper
  • 1 teaspoonful of table salt
  • 1/2 Cup of goat cheese

    Preparation

    Cook the asparagus in enough salted water, once ready, and pass them to a bowl of ice water for a couple of minutes.
    Separate the fourth part and reserve the end.
    Remove the artichokes, separate the heart and place everything in the blender.
    Add half the chicken stock, blend, add the asparagus, season with salt and pepper.
    Blend with the rest of the chicken stock.
    In a saucepan heat the butter and olive oil, sauté the garlic and onion.
    Then add the asparagus that you reserved, white wine, and artichoke mixture.
    Season with salt and pepper.
    Remove from heat and blend 3/4 of this mixture.
    Put it back to the fire and rectify the seasoning.
    Serves hot

    TIPS

    You can add pieces of goat cheese, roquefort or the cheese of your choice.
