Preparation
Cook the asparagus in enough salted water, once ready, and pass them to a bowl of ice water for a couple of minutes.
Separate the fourth part and reserve the end.
Remove the artichokes, separate the heart and place everything in the blender.
Add half the chicken stock, blend, add the asparagus, season with salt and pepper.
Blend with the rest of the chicken stock.
In a saucepan heat the butter and olive oil, sauté the garlic and onion.
Then add the asparagus that you reserved, white wine, and artichoke mixture.
Season with salt and pepper.
Remove from heat and blend 3/4 of this mixture.
Put it back to the fire and rectify the seasoning.
Serves hot
