1 kilo artichoke heart
3 cups celery, chopped, reserving a few leaves for garnish
8 cups chicken consommé
2/3 cups dry white wine
1 tablespoon ground mustard
1/2 sticks unsalted butter
2 cups light cream

In a stainless steel or enameled pot, place the artichoke hearts, broth, celery, wine, mustard powder, nutmeg, and butter.
Let the soup simmer until the vegetables are tender.
Blend gradually and strain through a sieve, pressing to ensure that only the liquids pass through.
Return the soup to the pot and add the cream. Season with salt and pepper.
